坦々麺
Ingredients
- Noodles - NOT THE HOKKIEN NOODLES FROM KROGER
- Unsweetened soy milk
- Veggies
- Garlic (2)
- Ginger (2g)
- Chinese chili bean paste
- Sugar
- Oyster sauce
- Sake/Mirin
- Chili oil
- White sesame paste or Tahini
- Rice vinegar
- Soy sauce
- Sichuan peppercorn flavored oil (optional)
- Chicken powder
- Peanuts
- Soft-boiled eggs
- Bok choy (optional)
- Peanuts (optional)
Preparation
Prepare veggies
- Chop 2 cloves garlic some ginger (finely chopped)
- Chop green onions (white for stir-frying, green for garnish)
- Cut box chop in half or quarter lengthwise
- Chop peanuts for garnish
Ramen eggs
- Prepare Soy Marinated Eggs
Instructions
Spicy pork or tofu topping
- In mixing bowl, add:
- 1/2 tsp sugar
- 1 tbsp chili paste
- 1 tbsp oyster sauce
- 1 tbsp Mirin
- Add 1 tbsp chili oil to wok and place over medium heat
- Add 200 grams of ground pork (or tofu)
- Once cooked, add chopped green onions, ginger, garlic
- Stir fry for 1 minute
- Change to high heat and pour in sauce
- Liquid evaporated mostly? DONE
Tare (seasoning paste)
- In bowl, add:
- 2 tbsp white sesame paste or Tahini
- 1 tbsp chili oil
- 1 tsp rice vinegar
- 2 tbsp soy sauce
- 1 tbsp Mirin
- Optional: 1/4 tsp Sichuan peppercorn
- If you have tsuyu, use 2 tbsp in place of soy and mirin
Broth
- In pot, add:
- 1.5 cups water
- 1.5 cups unsweetened soy milk
- 1 tbsp chicken powder
- Place over low heat and bring to simmer until warm (NO LID, watch for burning soymilk)
Prep noodles and toppings
- Boil water for other ingredients
- Blanch bok choy for 5 seconds, drain, and set aside
- Add bean sprouts and blanch for 30 seconds, drain, and set aside
- Cook noodles in same water for about 1 to 2 minutes
- Boil soy eggies
Assemble
- In serving bowl, add then STIR:
- 1/2 seasoning paste
- 1/2 broth
- Add drained noodles (spread for toppings)
- Top with mung bean sprouts, box choy, spicy pork or tofu, green onions, sesame seeds, chopped peanuts, soft boiled eggs
- Finish with a little bit of chili oil and enjoy!
