坦々麺

Ingredients

  • Noodles - NOT THE HOKKIEN NOODLES FROM KROGER
  • Unsweetened soy milk
  • Veggies
  • Garlic (2)
  • Ginger (2g)
  • Chinese chili bean paste
  • Sugar
  • Oyster sauce
  • Sake/Mirin
  • Chili oil
  • White sesame paste or Tahini
  • Rice vinegar
  • Soy sauce
  • Sichuan peppercorn flavored oil (optional)
  • Chicken powder
  • Peanuts
  • Soft-boiled eggs
  • Bok choy (optional)
  • Peanuts (optional)

Preparation

Prepare veggies

  1. Chop 2 cloves garlic some ginger (finely chopped)
  2. Chop green onions (white for stir-frying, green for garnish)
  3. Cut box chop in half or quarter lengthwise
  4. Chop peanuts for garnish

Ramen eggs

  1. Prepare Soy Marinated Eggs

Instructions

Spicy pork or tofu topping

  1. In mixing bowl, add:
    1. 1/2 tsp sugar
    2. 1 tbsp chili paste
    3. 1 tbsp oyster sauce
    4. 1 tbsp Mirin
  2. Add 1 tbsp chili oil to wok and place over medium heat
  3. Add 200 grams of ground pork (or tofu)
  4. Once cooked, add chopped green onions, ginger, garlic
  5. Stir fry for 1 minute
  6. Change to high heat and pour in sauce
  7. Liquid evaporated mostly? DONE

Tare (seasoning paste)

  1. In bowl, add:
    1. 2 tbsp white sesame paste or Tahini
    2. 1 tbsp chili oil
    3. 1 tsp rice vinegar
    4. 2 tbsp soy sauce
    5. 1 tbsp Mirin
  2. Optional: 1/4 tsp Sichuan peppercorn
  3. If you have tsuyu, use 2 tbsp in place of soy and mirin

Broth

  1. In pot, add:
    1. 1.5 cups water
    2. 1.5 cups unsweetened soy milk
    3. 1 tbsp chicken powder
  2. Place over low heat and bring to simmer until warm (NO LID, watch for burning soymilk)

Prep noodles and toppings

  1. Boil water for other ingredients
  2. Blanch bok choy for 5 seconds, drain, and set aside
  3. Add bean sprouts and blanch for 30 seconds, drain, and set aside
  4. Cook noodles in same water for about 1 to 2 minutes
  5. Boil soy eggies

Assemble

  1. In serving bowl, add then STIR:
    1. 1/2 seasoning paste
    2. 1/2 broth
  2. Add drained noodles (spread for toppings)
  3. Top with mung bean sprouts, box choy, spicy pork or tofu, green onions, sesame seeds, chopped peanuts, soft boiled eggs
  4. Finish with a little bit of chili oil and enjoy!
