- 1 1/2 cup pumpkin puree
- 3/4 cup vegetable oil
- 2/3 cup packed light brown sugar
- 2/3 cup granulated sugar
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 1 1/2 cup all-purpose flour
- 2 tsp pumpkin pie spice
- 1 tsp baking powder
- 3/4 tsp baking soda
- 1 tsp kosher salt

Instructions
Pumpkin bars
- Preheat the oven to 350ºF
- In a large bowl, whisk together the pumpkin, oil, light brown sugar, granulated sugar, eggs, and vanilla.
- Add the flour, pumpkin pie spice, baking powder, baking soda, and salt. Stir until smooth.
- Spray a 13-by-9 inch baking pan with baking spray with flour (or grease and sprinkle with flour, shaking off excess). Pour batter into pan and smooth with a spatula.
- Bake for 40-45 minutes or until a wooden toothpick inserted into the center comes out clean. Let cool completely in the pan.
Frosting or Glaze
Notes
- Substitute the pumpkin pie spice in the frosting with fresh orange zest for a bright, tangy topping.
