  • 1 1/2 cup pumpkin puree
  • 3/4 cup vegetable oil
  • 2/3 cup packed light brown sugar
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cup all-purpose flour
  • 2 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 3/4 tsp baking soda
  • 1 tsp kosher salt

Instructions

Pumpkin bars

  1. Preheat the oven to 350ºF
  2. In a large bowl, whisk together the pumpkin, oil, light brown sugar, granulated sugar, eggs, and vanilla.
  3. Add the flour, pumpkin pie spice, baking powder, baking soda, and salt. Stir until smooth.
  4. Spray a 13-by-9 inch baking pan with baking spray with flour (or grease and sprinkle with flour, shaking off excess). Pour batter into pan and smooth with a spatula.
  5. Bake for 40-45 minutes or until a wooden toothpick inserted into the center comes out clean. Let cool completely in the pan.
