Mound the flour in the center of your workstation. Dig a well into the mound and add eggs. Using a fork, beat together the eggs and incorporate the flour starting with the inner rim of the well.
Once the dough has become a shaggy mass, use your fingers or the bench scraper to press any loose bits of flour into the dough. Add a tiny bit of water if needed.
Hand knead the dough for 5-15 minutes until the dough is smooth, elastic, and uniform in color.
Wrap the dough in plastic and set aside for at least 30 minutes to an hour.
